Tahini Quinoa Veggie Bowl

Cook the quinoa first, according to the package directions.

2 Servings

Ingredients

Cooked quinoa (or cooked brown rice or potatoes/sweet potatoes)

All sorts of your favorite veggies (broccoli, mushrooms, kale, carrots, cauliflower, anything!)

Avocado

Cilantro

Tahini

Tamarind Paste

Lemon juice

Black sesame seeds

Toasted sesame oil

Coconut aminos or tamari

Salt & pepper

Directions

  1. Steam veggies for about 5 - 10 min., depending on their hardness (carrots & celery take the longest).
  2. Dice potatoes (if using), put in small pot with just enough water to cover, bring up to a boil and then let boil on med-high for 5 min.
  3. Add your starch base (quinoa, etc.) to the bowls.
  4. Dress steamed veggies in pot with Earth Balance, olive oil, sesame oil or lubricant of choice, salt & pepper and add to bowls.
  5. Top w/ tahini, lemon juice, coconut aminos.
  6. Dice avocado with a small knife in the peel and scoop out onto each bowl.
  7. Sprinkle on the sesame seeds and garnish w/ fresh cilantro, de-stemmed.
  8. Add more salt & pepper to taste.

Notes

A starch based bowl like this can be customized and altered in any way you like. The basic formula is the same (starch, vegetables, condiments, raw toppings like avocado/guacamole & salsa, herbs & spices). Make it taste good! You can also add beans, lentils, chickpeas, tofu or tempeh. It's so fast & easy to make you'll definitely find yourself adding this recipe to your go-to meals.
