Cremini mushrooms (baby portobello), sliced thin
Diced red onion or shallots
For the Dressing:
Apple cider vinegar
1 clove minced Garlic (optional)
Salt & Pepper
Prepare the dressing by whisking together the ingredients in a small bowl. In a medium mixing bowl, toss together the only the broccoli, onion and dressing. Add the mushrooms and toss again. This keeps the mushrooms from absorbing all of the dressing for themselves. Now, from here you have the option of letting all this marinate at room temperature for about an hour, for a more cooked feel. Or you can eat it right away!
This recipe is taken from Judita Wignall's cookbook Going Raw. I omit the "bloomed" wild rice to make this a faster, simpler recipe. Instant gratification baby!
